Organic Ontario Wheat Spirit Batch No 1 is an amazingly smooth beverage. It has a very clean, delicate aroma of warm yeast and malt with traces of wildflower.
This spirit has a creamy mouth feel with tantilizing flavours of spice with mixed citrus notes. The rich, clean, slightly sweet finish speaks volumes about the skill of the distiller.
Organic Ontario Wheat Spirit Batch No 1 was distilled from the 2012 harvest of soft white winter wheat grown by Mike & Bonnie O'Hara in Schomberg, Ontario. Soft white winter wheat is generally used for pastry flour, giving a more refined character to this spirit.
This grain was milled by Mark Heyhoe, owner of K2 Milling in Beeton, Ontario. His expertise in the craft of milling has preserved the components of the whole grain in this artisanal spirit.
The milled grain was mixed with carbon filtered water to create "mash" which was then heated to convert the starch to sugar. Once cooled, the mash was fermented for six days with yeast, converting the sugar to alcohol.
After fermentation, the mash was put into an artisan hybrid still. Only the hearts of the run were used to create this spirit as they are the smoothest and most flavourful. When the distillation run was finished, this spirit was blending with distilled water to create a smooth finished product with 50% alcohol.
This craft spirit is packaged in a unique 375 ml bottle complete with handle and wooden topped stopper. The label is reminiscent of an old-time distillery and is sure to be a conversation starter.
